Winnipeg Bride Has her Cake - Made with Cheese, Please!

Karen Barg and Mark Maurice are overjoyed at their first viewing of the cheese masterpiece.
In a twist on tradition, soon-to-be-married Karen Barg asked Bothwell Cheese to design a three-tiered cake for her wedding made entirely out of cheese.
Working with Pastry Chef and Instructor Helmut Mathae, Bothwell created an extraordinary cake - the first of its kind in Manitoba. Instead of the customary tower of white icing guests cut into three layers of cheese finished with white and coloured cheddar. Made with great big rounds of Bothwell's famous Fresh Cheddar, Marble Cheddar, Gouda and Madagascar Green Peppercorn Cheese, the cake was topped with a pair of matching bride and groom mice - carved out of cheese, of course.
Karen became hooked on Bothwell Cheese at a very young age, when she'd sneak a taste of the cheeses from the buffet table groaning with goodies at family gatherings in Southern Manitoba. When Karen and fiance Mark Maurice got engaged, they wanted a cake more imaginative than a mountain of white icing or a bucket of chocolate ganache. Bothwell and Mathae did not disappoint.
The happy couple had their cake and ate it, too along with their happy guests on Saturday, September 8, 2007.

Perogies for a Good Cause
Here in Manitoba, we take our perogies very seriously. Handed down through generations of Slavic cultures, the perfect perogy is only made with fluffy, smooth potatoes and the best quality cheese there is.
So when our staff at Bothwell Cheese heard that local Winnipeg radio station HOT 103 was partnering with Winnipeg Technical College to prepare for Ace and Chrissy's Biggest Charity Perogy Sale Ever, we felt compelled to join the cause.
We donated all of the cheddar to make over 1,300 bags of potato-cheddar perogies. That's over 15,000 individual perogies! They were sold for $12 a bag with proceeds going to The Arthritis Society's "Joints in Motion" campaign.
The day of assembly, called "Pinch and Preparation Day" happened on Friday, November 16th at the College.
Staff from Winnipeg radio station HOT103 and students from Winnipeg Technical College help make perogies the good old fashioned way: spending a day making them with friends.
