Q – We cook a lot with cheese in this household and grilled cheese sandwiches are a hit with our picky eaters. So I’m wondering which type of cheese has the best melt? What would make our grilled cheese sandwiches the creamiest? – Mom of Three

For a creamy grilled cheese look for cheese with higher moisture content as well as added cream to the milk, such as Jalapeño Monterey Jack. Usually, the younger the cheese, the more elasticity, like Marble, Medium and Old Cheddar. Full fat Mozzarella will give you a mild taste and nice string, where a young Smoked Gouda will give you a nice stringy melt with lots of sweet, smoky, and nutty flavours.

Adding a little bit of freshly grated Parmesan will enhance your cheesy experience when using a milder cheese.

Use smoked varieties such as Smoked Gouda, Maple Smoked Extra Old Cheddar or Smoked Parmesan in grilled cheese sandwiches that feature chicken, turkey, or beef.

Feeling adventurous? Try using flavoured cheeses like Habanero with Cracked Black Pepper, Black Truffle or Muenster!

    I bought a few of Bothwell’s mozzarella and prepped several lasagnes with it, only for it not to melt and get nice and gooey, but got even harder and stayed in clumps. I usually love Bothwell’s products but this was pretty disappointing, especially after putting in all that work.
