As a teenager my go to summer snack was cheddar cheese melted in the microwave on a plate, accompanied by a crunchy pickle dipped in mustard. I loved how the cheese would get crispy around the edges, while the middle remained chewy. I’m happy to report that over time my cheese melting practices have evolved!
