Charred Green Salad with Herbs & Garlic Cheddar

A light and refreshing salad made with roasted fennel, greens and Sunny Dog Barkin' Herbs and Garlic Cheddar.
Ingredients
- One fennel, roasted
- Mixed greens and arugula
- Balsamic glaze
- Sunny Dog Barkin' Herbs and Garlic Cheddar, crumbled and/or sliced
Directions
- Place roasted fennel on a plate (recipe below)
- Place strips of Sunny Dog Barkin' Herbs and Garlic Cheddar around the outside of the plate
- Place arugula in the centre of plate
- Place mixed greens on top of arugula
- Drizzle with balsamic glaze
- Top salad with crumbled Sunny Dog Barkin' Herbs and Garlic Cheddar
Roasted Fennel
- Chop fennel and place on parchment lined baking sheet
- Place in preheated 425°F oven.
- Bake for 7-9 minutes to allow the natural sugars to come out. Brown colour is desirable, burning is not.
Chef D Tip: You can use oil, but it really isn't needed.
