Chicken Pot Pie Casserole with Herbs & Garlic Cheese Biscuits

This chicken pot pie casserole is a comforting family favourite perfect for fall and winter months. Flaky homemade biscuits made with flavourful Sunny Dog Barkin' Herbs & Garlic Cheddar adds another layer of deliciousness.
Ingredients
Chicken Pot Pie Filling
- ¼ cup butter
- 1 medium onion, diced
- 3 ribs of celery, diced
- 3 medium carrots, peeled and diced
- ⅔ cup frozen peas
- 4 tbsp. parsley, chopped
- ¼ cup flour
- 2 cups chicken stock
- ⅔ cup half and half cream
- 3 cups cooked chicken, diced
- Salt and pepper to taste
Biscuits
- 1 ¼ cup flour
- 1 ¼ tsp. baking powder
- ½ tsp. baking soda
- 1 tsp sugar
- ½ tsp. salt
- 3 tbsp. butter, cold
- ½ cup roasted red peppers, drained and diced
- 1 cup Sunny Dog Barkin’ Herbs & Garlic Cheddar, grated and divided
- ¼ cup buttermilk
Directions
Chicken Pot Pie Filling
- Preheat the oven to 350 ° F. Set aside a 8 x 12 baking dish.
- In a medium-large pot on medium-high heat, melt butter. Add in onions, celery and carrots and cook until softened, about 15 minutes stirring occasionally.
- Add frozen peas, parsley and flour into pot and combine until flour is fully coating vegetables.
- Cook flour for 2 minutes then add chicken stock and half and half and cook until mixture thickens, about 5 minutes.
- Add in chicken and season with salt and pepper. Remove pot from heat and carefully transfer chicken mixture into the baking dish and set aside while preparing biscuits.
Biscuits
- In a small-medium bowl combine flour, baking powder, baking soda, sugar and salt.
- Add in the butter and combine butter with your hands into the flour mixture until it resembles a course meal.
- Add in red peppers and ½ cup of cheese and gently combine. Pour in the buttermilk and combine using a spatula.
- Divide the dough into 6 equal amounts and drop dough evenly on top of the pot pie.
- Sprinkle remaining cheese on top of the biscuits evenly and bake for 25-28 minutes, or until biscuits are cooked though and chicken mixture in bubbling.
- Remove from oven and serve hot!
