Crostini 3 Ways

Perfect for entertaining, this recipe for Crostini 3 Ways is fun, easy, and flavourful. They're made with all three cheeses from our Sliced Variety Pack. There's Balsamic Blackberry Mozzarella, Charred Corn and Chili Monterey, and Apple Cheddar with Thyme Caramelized Onions.

Ingredients

Blackberry Mozzarella Crostini with Pistachios and Hot Honey 

  • ½ cup Blackberries
  • 1 tbsp. Balsamic Vinegar
  • Pinch of fine salt
  • ¼ tsp. cornstarch
  • 1/3 baguette
  • ¼ cup butter (room temperature)
  • 3-4 Mozzarella Slices from Bothwell's 450g Sliced Variety Pack 
  • Toasted pistachios, roughly chopped
  • Handful of fresh mint, thinly sliced
  • ¼ cup honey
  • ¼ tsp. chili flakes

Charred Corn and Chili Pepper Monterey Crostini with Basil

  • 1 ear of corn
  • 1 tbsp. olive oil
  • Salt and pepper
  • 1/3 baguette
  • 1/4 cup butter (room temperature)
  • 3-4 Red Hot Chili Pepper Monterey Jack Slices from Bothwell's 450g Sliced Variety Pack
  • Handful of fresh basil
  • Flaky sea salt

Apples Cheddar Crostini with Thyme Caramelized Onions

  • 1 tbsp. olive oil
  • 1 medium yellow onion, thinly sliced
    • ¾ tsp fresh thyme, plus extra for finishing (stems removed)
  • 1/3 baguette
  • ¼ cup butter (room temperature)
  • 3-4 Medium Cheddar Slices from Bothwell's 450g Sliced Variety Pack 
  • 1 apple, thinly sliced
  • Flaky sea salt

 

Directions

 

Blackberry Mozzarella Crostini with Pistachios and Hot Honey 

  1. First, make your balsamic blackberries. In a small saucepan combine berries, balsamic vinegar, and salt and bring to a boil over medium high heat. Cover the pan, reduce the heat to low, and simmer for 5 minutes, or until the berries have softened and released their juice. In a small bowl dissolve the cornstarch in a ½ tsp of water, then slowly drizzle into the berries, stirring constantly. Once the mixture has returned to a simmer and thickened, remove from the heat.
  2. Meanwhile, preheat your oven to 375 F and line a baking tray with parchment paper. Slice your baguette into thick slices, about ½ inch thick. You should get about 6-7 pieces. Butter each side of baguette generously and place on the tray. Transfer to the oven and bake for 10 minutes.
  3. Remove crostini from oven and flip over so the browned side is facing up. Top each crostini with half of a Mozzarella slice and 2-3 balsamic berries. Place back in the oven and bake until the crostini are browned and the mozzarella is bubbling, about 10-15 minutes.
  4. While the crostini are in the oven make your hot honey. Combine the honey and chili flakes a small bowl and microwave for 30 seconds. Stir well to combine.
  5. Remove crostini from oven and top each with pistachios, fresh mint, and a generous drizzle of the hot honey. Enjoy!

Charred Corn and Chili Pepper Monterey Crostini with Basil

  1. First, heat up your grill. Husk the corn and brush it with olive oil, and season with salt and pepper. Once your grill is hot place corn on the grill and rotate every few minutes until charred, about 10 minutes total. Remove corn and allow to cool slightly. Once you can handle it cut the corn off the cob and set aside. Depending on the size of your corn you may not use all of it for the crostini.
  2. Meanwhile, preheat your oven to 375 F and line a baking tray with parchment paper. Slice your baguette into thick slices, about ½ inch thick. You should get about 6-7 pieces. Butter each side of baguette generously and place on the tray. Transfer to the oven and bake for 10 minutes.
  3. Remove crostini from oven and flip it over so the browned side is facing up. Top each crostini with half of a Monterey Jack slice and corn. Place back in the oven and bake until cheese is melted and crostini are browned, about 10-15 minutes.
  4. Remove from oven and top each crostini with fresh basil and a pinch of flaky salt. Enjoy!

Apples Cheddar Crostini with Thyme Caramelized Onions

  1. Heat a skillet over medium and add olive oil. Add your onions and season well with salt and pepper. Cook for 15 minutes, stirring frequently until onions are translucent. Lower the heat to low, add thyme leaves and continue to cook until a golden brown, about 20-25 minutes. Transfer onions to a cutting board and roughly chop.
  2. Meanwhile, preheat your oven to 375 F and line a baking tray with parchment paper. Slice your baguette into thick slices, about ½ inch thick. You should get 6-7 pieces. Butter each side of baguette generously and place on the tray. Transfer to the oven and bake for 10 minutes.
  3. Remove crostini from oven, flip over so the browned side is facing up. Top with half of a Medium Cheddar slice and caramelized onions. Place back in oven until cheese is bubbling and crostini are golden brown, about 10-15 minutes.
  4. Top each piece with 2-3 apple slices, more fresh thyme, and flaky salt. Enjoy!
