Herbs & Garlic Cheddar Corn Chowder

A creamy and cheesy corn chowder made with our Sunny Dog Barkin' Herbs and Garlic Cheddar and lots of sweet corn. This is a great recipe for any time of year.
Ingredients
- 1 cup of chopped onion
- 1 cup of chopped leeks
- 1 cup diced celery root
- 1 ½ cups of corn
- 1 litre of vegetable stock
- 1 cup shredded Sunny Dog Barkin' Herbs and Garlic Cheddar
- 1 cup of 35% cream
- 2 tbsp. of olive oil
- Salt to taste
Directions
- Add 2 tbsp. of olive oil to pot and heat
- Sauté onions and leeks
- Add celery root
- Add corn and sauté for 2-3 minutes
- Add vegetable stock and bring to a gentle boil for 2-3 minutes. Let simmer for 20 minutes
- Add in 35% cream and puree with emulsifier
- Add in grated cheese
