Chef John’s Impossible Sliders

These impossible meat sliders are perfect for summer grilling and entertaining. Fresh and light, these vegetarian sliders are a crowd pleaser, even among meat eaters!


  • 2 packages Impossible meat, 340g each
  • ½ cup panko crumbs
  • 1 large egg
  • 2 dashes Worcestershire
  • 1 dash Tabasco
  • 1 Tbsp. salt
  • 1/2 Tbsp. black pepper
  • 1/2 Tbsp. onion powder





  1. Combine all ingredients in a large mixing bowl with a wooden spoon or spatula
  2. Each burger should weigh 60g or 2oz. Chef tip: use a small dish to help portion the burger mixture into balls This recipe will yield 13 x 2oz. burgers. Shape burger balls with your hands into small patties or using a burger press
  3. Griddle or grill at medium high at 400 degrees roughly 4 minutes per side (8 minutes in total). Internal temperature should be over 140 degrees.
  4. Add a thick slice of cheese and melt for 1 or 2 minutes
  5. Serve sliders on mini brioche with all of your favorite condiments and toppings
