Oatmeal Raisin Cheddar Smash Cookies

A deliciously sweet and savoury cookie made with oatmeal, raisins and our Project Verified Non-GMO Sunny Dog Barkin' Herbs and Garlic Cheddar.

Ingredients

  • ½ cup of butter, cubed and softened
  • ½  cup of brown sugar
  • ⅓ cup of white sugar
  • 1 egg
  • 1 ¼ cups of flour
  • ¾ tsp of baking soda
  • ½ tsp of salt
  • ⅛ tsp of ground nutmeg
  • 1 cup of rolled oats
  • 1 cup of raisins
  • ½ a cup of grated Sunny Dog Barkin' Herbs & Garlic Cheddar 

Directions

  1. Preheat oven to 350 degrees F
  2. In a mixer, cream together softened butter, sugar and brown sugar on medium high speed for 2-3 minutes
  3. Reduce mixer speed to medium and add egg until just combined. Do not over mix or cookies may become tough
  4. Sift together flour, baking soda, salt and nutmeg. Add to mix on low speed until incorporated for about 1-2 minutes
  5. Add oats, raisins and shredded cheese. Mix for 30 seconds until combined
  6. Roll out dough into tube shape and cut into slices (approx. 2 ounces each)
  7. Place on a parchment lined baking tray 2 inches apart
  8. Bake at 350 degrees F for 10 minutes or until lightly browned
  9. With a non stick spatula or lifter “smash” (lightly) cookie into flatter more cookie-like shape
  10. Bake another 3-5 minutes, remove from oven and cool
