Oatmeal Raisin Cheddar Smash Cookies

A deliciously sweet and savoury cookie made with oatmeal, raisins and our Project Verified Non-GMO Sunny Dog Barkin' Herbs and Garlic Cheddar.
Ingredients
- ½ cup of butter, cubed and softened
- ½ cup of brown sugar
- ⅓ cup of white sugar
- 1 egg
- 1 ¼ cups of flour
- ¾ tsp of baking soda
- ½ tsp of salt
- ⅛ tsp of ground nutmeg
- 1 cup of rolled oats
- 1 cup of raisins
- ½ a cup of grated Sunny Dog Barkin' Herbs & Garlic Cheddar
Directions
- Preheat oven to 350 degrees F
- In a mixer, cream together softened butter, sugar and brown sugar on medium high speed for 2-3 minutes
- Reduce mixer speed to medium and add egg until just combined. Do not over mix or cookies may become tough
- Sift together flour, baking soda, salt and nutmeg. Add to mix on low speed until incorporated for about 1-2 minutes
- Add oats, raisins and shredded cheese. Mix for 30 seconds until combined
- Roll out dough into tube shape and cut into slices (approx. 2 ounces each)
- Place on a parchment lined baking tray 2 inches apart
- Bake at 350 degrees F for 10 minutes or until lightly browned
- With a non stick spatula or lifter “smash” (lightly) cookie into flatter more cookie-like shape
- Bake another 3-5 minutes, remove from oven and cool
