Roasted Squash Salad

This hearty roasted squash salad is the perfect recipe for fall. It's super simple to make and the blend of veggies creates a beautiful pop of colour.

Ingredients

  • 1 acorn squash, roasted
  • Diced peppers
  • Diced asparagus
  • Micro greens
  • Peas
  • Bothwell Medium Cheddar, julienne cut
  • Drizzle with balsamic reduction

Directions

Roasted Squash

  1. Cut acorn squash into sections; place sections on parchment paper covered cookie sheet and lightly drizzle with olive oil; lightly salt and pepper
  2. Bake for 20 - 22 minutes at 350 degrees

Salad

  1. Arrange Squash, peppers, asparagus on each plate
  2. Place greens in the centre of the plate, garnish with peas
  3. Top with 6 julienne pieces of cheddar
  4. Drizzle balsamic over salad
