Roasted Squash Salad

This hearty roasted squash salad is the perfect recipe for fall. It's super simple to make and the blend of veggies creates a beautiful pop of colour.
Ingredients
- 1 acorn squash, roasted
- Diced peppers
- Diced asparagus
- Micro greens
- Peas
- Bothwell Medium Cheddar, julienne cut
- Drizzle with balsamic reduction
Directions
Roasted Squash
- Cut acorn squash into sections; place sections on parchment paper covered cookie sheet and lightly drizzle with olive oil; lightly salt and pepper
- Bake for 20 - 22 minutes at 350 degrees
Salad
- Arrange Squash, peppers, asparagus on each plate
- Place greens in the centre of the plate, garnish with peas
- Top with 6 julienne pieces of cheddar
- Drizzle balsamic over salad
