Savoury Breakfast Waffles

These Savoury Breakfast Waffles made with our Lactose-Free Old White Cheddar are an absolute must-try for brunch. Our Lactose-Free Old Cheddar adds a sharp twist to plain waffles. Serve with homemade roasted red pepper butter and spicy maple syrup.

Ingredients

Roasted Red Pepper Butter

  • ½ cup butter, softened
  • ¼ cup roasted red peppers, drained and minced

Spicy Maple Syrup

  • 1 cup maple syrup
  • 1 tsp. chili powder
  • ¼ tsp. crushed red chili flakes
  • ¼ tsp. cayenne pepper

Waffles

  • 2 cups all-purpose flour
  • 1 tsp. sugar
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 2 eggs
  • 1 ¾ cup buttermilk
  • 1 cup Bothwell Lactose-Free Old Cheddar, grated
  • 4 slices thick bacon, cooked and crumbled
  • 1 tbsp. fresh chives, minced
  • oil spray

Accompaniments

  • 2 cups microgreens
  • 4 eggs, fried

Directions

Roasted Red Pepper Butter
1. In a small bowl combine butter and red peppers.

Maple Syrup
1. In a measuring cup combine maple syrup, chili powder, chili flakes, and cayenne pepper,
mix well.

Waffles
1. Preheat waffle iron
2. In a large bowl combine flour, sugar, baking powder, and salt
3. In a small bowl combine buttermilk and eggs.
4. Add buttermilk mixture to flour mixture and combine.
5. Gently fold in the cheese, bacon, and chives.
6. Spray oil on the preheated waffle iron and pour batter on according to the manufacturer’s
directions.
7. Serve immediately with butter, syrup, ½ cup microgreens, and a fried egg.
