Spicy Dill Pickle Crispy Chicken Sandwich

Ingredients
Fried Chicken
- 1 large chicken breast, cut in half lengthwise
- ½ cup buttermilk
- ½ cup AP flour
- 2 tbsp. cornstarch
- 1 tsp. salt
- 1 tsp. paprika
- ½ tsp. cayenne pepper
- Vegetable oil for frying
Assembly
- 2 brioche burger buns, toasted
- 4-6 slices Sunny Dog Spicy Dill Pickle Monterey Jack
- ½ cup iceberg lettuce, shredded
- 6- 8 dill pickle slices
- 4 slices red onion
- 6 slices of spicy red peppers
- 2 tbsp. mayo
Directions
Fried Chicken
- In a medium mixing bowl, combine buttermilk and a pinch of salt and pepper
- Add the chicken and cover. Refrigerate for at least 4 hours.
- Preheat frying oil to 375° F.
- In a medium bowl, combine flour, cornstarch, salt, paprika and cayenne.
- One piece at a time, remove chicken from the buttermilk mixture and place it in the flour mixture and coat thoroughly.
- Place coated chicken in oil and cook for 8-10 minutes or until the internal temperature is 165°F.
- Remove from oil and place on a paper towel-lined plate to catch any excess oil
Assembly
- On the bottom buns, layer 2-3 slices of cheese and top with hot fried chicken. Top each piece of chicken with ¼ cup lettuce, 3-4 dill pickles, 2 slices of red onion and 3 slices of spicy red pepper.
- Spread 1 tbsp. mayo on each top bun and place on top of the sandwich.
- Serve immediately and enjoy!
