Ingredients
Pepperoni Zucchini Pizza
- 1 large zucchini
- 4 Tbsp. pizza sauce
- ¾ cup grated Bothwell Lactose-Free Mozzarella
- Mini pepperonis (or cut up pieces)
- Salt and pepper to taste
Burrito Zucchini Pizza
- 1 large zucchini
- 1/2 cup cooked ground beef
- 4 Tbsp. tomato sauce
- 2 Tbsp. corn
- 2 Tbsp. black beans
- 2 Tbsp. red onions
- ¾ cup grated Bothwell Lactose-Free Jalapeño Monterey Jack
- Salt and pepper to taste
- Serve with green onions
Canadian Zucchini Pizza
- 1 large zucchini
- 4 Tbsp. pizza sauce
- ½ cup ground sausage
- 3 Tbsp. mushrooms
- 2 Tbsp. red onions
- Mini pepperonis
- ¾ cup grated Bothwell Lactose-Free Medium Cheddar
- Salt and pepper to taste
Vegetarian Zucchini Pizza
- 1 large zucchini
- 4 Tbsp. marinara sauce
- 2 Tbsp. mushrooms
- 2 Tbsp. red onions
- ¾ cup grated Bothwell Lactose-Free 18 Month Old Cheddar
- 3 cherry tomatoes
- 1-2 Tbsp. Black olives
- Salt and pepper to taste
Herb Chicken Zucchini Pizza
- 1 large zucchini
- 1 Tbsp. olive oil
- ½ cup cooked shredded chicken
- 1 tsp. Italian seasoning
- ¾ cup grated Bothwell Lactose-Free Old White Cheddar
- Salt and pepper to taste
- Fresh herbs
Directions
Preheat the oven to 400F. Prepare ingredients and spoon into zucchini boats. Bake for 20 minutes. Remove from the oven and allow to cool for 5 minutes before serving or transferring to a heat-proof lunch container. Enjoy!
