Pepperoni Zucchini Pizza

Burrito Zucchini Pizza

  • 1 large zucchini
  • 1/2 cup cooked ground beef
  • 4 Tbsp. tomato sauce
  • 2 Tbsp. corn
  • 2 Tbsp. black beans
  • 2 Tbsp. red onions
  • ¾ cup grated Bothwell Lactose-Free Jalapeño Monterey Jack
  • Salt and pepper to taste
  • Serve with green onions

Canadian Zucchini Pizza

  • 1 large zucchini
  • 4 Tbsp. pizza sauce
  • ½ cup ground sausage
  • 3 Tbsp. mushrooms
  • 2 Tbsp. red onions
  • Mini pepperonis
  • ¾ cup grated Bothwell Lactose-Free Medium Cheddar
  • Salt and pepper to taste

Directions

Preheat the oven to 400F. Prepare ingredients and spoon into zucchini boats. Bake for 20 minutes. Remove from the oven and allow to cool for 5 minutes before serving or transferring to a heat-proof lunch container. Enjoy!
